Vin de Noix

Soak nuts 1 hour. Drain, dry, and quarter. Combine everything in a large non-reactive container with a lid. Stir to dissolve sugar. Stir in a cool, dark place 40 days, stirring occasionally. Strain into a separate non-reactive container and adjust sugar. It will continue mellowing as it ages. Bottle and store in a cool, dark place to age for 4 months. Serve ice cold.
