An American version of a Chinese recipe.
Combine pork and cornstarch in a sealable container and shake to evenly coat the meat. Remove pork, shaking off excess starch.
Heat oil in a large skillet over medium-high heat until shimmering. Add pork in an even layer. Cook 4-5 minutes until browning, then flip and cook an additional 2-3 minutes until fully cooked. Remove pork from pan.
Add the garlic and ginger to the pan and fry briefly until aromatic. Add soy sauce, sugar, and water, stirring to dissolve and scrape up browned bits. Bring to a simmer and then return pork to pan along with green onion.
Simmer for a few minutes to thicken sauce. Serve over rice garnished with sesame seeds.
